Yesterday we produced about 25 gallons of first-run distillate. As with all things related to this project, there was a steep learning curve, and we expect much greater efficiency as the week wears on. According to Dave P., the average proof for this batch should be about 40, which is what he expected. After it is redistilled, the proof should increase to between 100 and 110.
